Soup in the morning, noodles at midday, the water banquet in the evening. Arrive at the wrong hour and you will order the right dish from the wrong kitchen.
- Before 9 a.m.: the broth shops are open and at their best.
- Midday: noodles and quick plates.
- Evening: the water banquet, which needs time and people.
The Five-Must-Order dishes
- Luoyang water banquet: a sequence of broth-based courses, sour and peppery, served one after another. The city's signature table.
- Peony swallow dish: the banquet's centrepiece — radish shredded and cooked until it looks and tastes like something far more expensive, floated in broth.
- Jiang noodles: noodles in a lightly fermented sour broth, with celery and peanuts. An acquired taste, and a local one.
- Bu fan soup: a peppery soup with vermicelli, fungus and meat, named for the batter that is never flipped.
- Beef or donkey broth: the real Luoyang breakfast. A bowl of broth and a flatbread, finished by eight.
Breakfast Is the Actual Luoyang Meal
Visitors plan dinner and miss the point. The broth shops at dawn are where the city eats, and they close when the pot is empty, not when the clock says so.
If Luoyang only gets one meal from you, give it the morning.
The Water Banquet Needs a Table of People
It is a sequence, not a single dish, and it does not work for two people who are already full. Order it with a group, on an evening with nothing scheduled after it, and expect to sit for two hours.
